Avocado Rose Toast: Video Recipe

  • 1 medium firm avocado
  • 1 slice whole wheat toast
  • 1 hard boiled egg
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon green onion, diced
  • 1/2 teaspoon salt and pepper


Cut avocado in half and separate it from its skin by scooping the flesh out with a spoon. Place halved side down on a cutting board, and slice thinly with a sharp knife. 

Fan out sliced avocado into a long line, with the slices slightly overlapping each other. Starting with one side, roll avocado slices toward the center. Continue curling until a rose shape appears.

Carefully scoop avocado rose atop whole wheat toast. Sprinkle with fresh lemon juice, diced green onion, and salt and pepper. Serve with a hard boiled egg on the side and enjoy!
